Nicole Clark’s educational background includes a Bachelor of Science in Applied Nutrition from Penn State, a Master of Science in Food and Nutrition from IUP, and a Doctorate of Clinical Nutrition from the University of Medicine and Dentistry of New Jersey.
Clark is a certified diabetes educator, a registered dietitian, and a licensed dietitian nutritionist in Pennsylvania. Clark graduated with high honors from the University of Medicine and Dentistry of New Jersey and was awarded the IUP Faculty Scholarship Recognition in 2009 and 2012. Her research interests include diabetes, counseling, and complementary and alternative medicine.
In 2016, Nicole Clark was recognized as an Outstanding Dietetic Educator by the Nutrition and Dietetic Educators of Practitioners.
Within the department, Clark teaches undergraduate Careers in Food and Nutrition, Introduction to Nutrition, Medical Nutrition Therapy, and Nutrition. On the graduate level, she teaches Applying Research Methods in Food and Minerals and Water in Nutrition.
