Chef Barnes and Chef Reed at the Farm Show

On January 11, IUP Academy of Culinary Arts faculty Chef Thomas Barnes and Chef Erin Reed attended the Pennsylvania Farm Show in Harrisburg, PA, accompanied by culinary students Jacob Anderson, Brock Kutskel, Elizabeth Myers, and Luke Behr and baking and pastry students Karly Framer, Jamal Keith, and Ava Rokosky.

Chef Barnes and Chef Reed led demonstrations featuring ricotta agnolotti and grapefruit cheesecake while students helped prepare thousands of food samples for six different demonstrations throughout the day.

Additionally, culinary students Anderson, Kutskel, and Behr competed in a mystery basket cooking competition against students from Philabundance, a nonprofit organization out of Philadelphia. Students were tasked with creating five entree plates utilizing all of the basket ingredients in just 30 minutes. Each team was given the same ingredients, which were revealed at the start of the competition: ground pork, skyr yogurt, honey, brussels sprouts, and potatoes. Teams had just seconds to conceptualize a dish.

Culinary students at the Farm Show

Team IUP created a mini pork meatloaf accompanied by a brussels sprout and apple slaw (utilizing the yogurt and honey), a crispy potato latke, and boursin cream sauce. Both teams finished with seconds to spare. Five different judges critiqued each team’s plate, scoring on taste, presentation, utilization of ingredients, etc. Team IUP came out as the first place winners with a score of 456 to 403.
