Tim earned his certificate in both the Culinary Arts and in the Baking and Pastry Arts programs at the IUP Academy of Culinary Arts. He completed his externship at Marriott New Orleans. After completing his externship, Tim accepted their offer of a full-time position. He was lead baker at Marriott New Orleans for seven years.
While at Marriott New Orleans, Tim, earned a few Heart of the House nominations—given to those who excelled at their job for the month. To earn this nomination, Tim stepped up and assisted on action stations for big groups and jumped in and helped the restaurant and banquet kitchens when opportunities arose. Tim was also named Culinary Champ after seven straight days of work for a group of 3,400 Marriott GMs. He was named Culinary Champ because he helped in all facets of the kitchen, bakery, and action stations throughout that week.
Tim then became an assistant team leader of Whole Foods Market Bakery in Metairie, Louisiana. He is currently a sous chef of bread and pastry at Willa Jeans, a cherished bakery in New Orleans’ heart, known for its comforting southern fare.
IUP ACA set Tim up for success by instilling a sense of urgency, organization, and time management. When asked what advice he would pass on to current and future students, he said, “Work hard, have fun, always move with purpose and a sense of urgency, be organized and on time, and do what you love, love what you do.”
